    How to Make This Spring Salad

    This Spring Salad recipe is incredibly simple to make. All you need to do is add the ingredients to a large bowl and toss them in the dressing.

    Note: I find that the easiest way to slice the radishes, cucumbers, and red onions for this recipe is to use a mandolin. This isn't necessary, but I find that it saves time and gives a perfectly consistent, thin cut each time.

    Ingredient Notes

    Arugula: If you prefer a milder green, you can substitute with baby spinach or mixed greens.

    White Beans: These add a hearty element and protein to the salad. There are several varieties which are very similar: white beans, great northern beans, and cannellini beans. You can also substitute with chickpeas for a different flavor profile.

    Radishes: These provide a crunchy texture and a slightly spicy kick. If you aren't a fan of radishes, consider using thinly sliced bell peppers instead.

    Mini Cucumbers: These add a refreshing crunch. English cucumbers or regular cucumbers will work just as well.

    Feta Cheese: Goat cheese or blue cheese can be used as alternatives.
