How to Make This Spring Salad
This Spring Salad recipe is incredibly simple to make. All you need to do is add the ingredients to a large bowl and toss them in the dressing.
Note: I find that the easiest way to slice the radishes, cucumbers, and red onions for this recipe is to use a mandolin. This isn't necessary, but I find that it saves time and gives a perfectly consistent, thin cut each time.
Ingredient Notes
Arugula: If you prefer a milder green, you can substitute with baby spinach or mixed greens.
White Beans: These add a hearty element and protein to the salad. There are several varieties which are very similar: white beans, great northern beans, and cannellini beans. You can also substitute with chickpeas for a different flavor profile.
Radishes: These provide a crunchy texture and a slightly spicy kick. If you aren't a fan of radishes, consider using thinly sliced bell peppers instead.
Mini Cucumbers: These add a refreshing crunch. English cucumbers or regular cucumbers will work just as well.
Feta Cheese: Goat cheese or blue cheese can be used as alternatives.
About The Dressing
The dressing for this salad is a Lemon Basil Vinaigrette. I used a store bought version of this dressing from Newman's Own, but you could also make a homemade version.
Dressing Options
Here are a few other dressing ideas that would be tasty either as homemade or store-bought alternatives:
- Balsamic Vinaigrette
- White Wine Vinaigrette
- Ranch Dressing
- Italian Dressing
Frequently Asked Questions
It's not recommended to make this salad ahead of time since the ingredients are best enjoyed fresh.
This salad can be a light meal or you can serve it with a main course. It's versatile enough to go with most main courses, and would pair especially well with seasonally-inspired ones.
Top Tips
- Dry the Arugula: Make sure your arugula is completely dry before assembling the salad to avoid excess moisture.
- Toss Before Serving: Wait to toss your salad until just before serving to preserve the texture and avoid wilting.
- Slice Your Vegetables with a Mandolin: If you have one, a mandolin is a quick and consistent way to slice your radishes, cucumbers, and red onion for this recipe. I use the thinnest or second thinnest setting.
