- 5 cups arugula
- 1 avocado, diced
- 1 (15 ounce) can white beans, drained & rinsed
- 1 cup sliced radishes
- 1 cup sliced mini cucumbers
- β cup crumbled feta cheese
- ΒΌ cup sliced red onion
- Lemon Basil Vinaigrette (I used Newman's Own)
Instructions
- Add the arugula and salad toppings to a large bowl. Drizzle the dressing on top and toss to mix. Enjoy!
