Ingredients

  • 5 cups arugula
  • 1 avocado, diced
  • 1 (15 ounce) can white beans, drained & rinsed
  • 1 cup sliced radishes
  • 1 cup sliced mini cucumbers
  • β…“ cup crumbled feta cheese
  • ΒΌ cup sliced red onion
  • Lemon Basil Vinaigrette (I used Newman's Own)

Instructions

  1. Add the arugula and salad toppings to a large bowl. Drizzle the dressing on top and toss to mix. Enjoy!
