Ingredients
- 4 sweet potatoes
- 2 tablespoons olive oil
- 2 boneless (skinless chicken breasts (about 1 pound))
- ½ cup BBQ sauce
- ½ red onion (sliced)
- ½ cup chopped cilantro
- 1 avocado
- Salt & pepper (to taste)
Instructions
- Preheat the oven: preheat the oven to 425 degrees. Line a baking sheet with foil or parchment paper.
- Cook the sweet potatoes: rinse the sweet potatoes and poke several holes around them with a fork. Bake for 50 minutes in the oven, until tender when pierced with a fork. Cooking time will vary depending on the size of the potatoes.
- Cook the chicken: heat 2 tablespoons olive oil in a large skillet over medium high heat. Season the chicken breasts with salt & pepper. Add the chicken to the skillet, cover with a lid, and cook for 5 - 6 minutes on each side, until cooked through.
- Shred the chicken: use two forks or your fingers to shred the cooked chicken. In a large bowl, mix the shredded chicken with the BBQ sauce.
- Stuff the potatoes: cut the potatoes down the middle, stuff with chicken and top with red onion, chopped cilantro and diced avocado. Optionally, add an extra drizzle of BBQ sauce on top of each.
