    This sheet pan chicken and vegetables recipe is an easy all-in-one dinner. It's a simple recipe that's ready in less than 30 minutes and full of fresh, healthy ingredients.

    This recipe cooks your whole dinner on one sheet pan: chicken, sweet potatoes, brussels sprouts, and red onions. It uses a generous amount of seasonings for lots of flavor and a full dinner that you'll want to make again & again.

    This recipe is ideal as a quick, healthy dinner for a busy day or as meal prep for your week. It's also naturally gluten free & paleo.

    Sheet Pan Chicken and Vegetables Ingredients

    • 2 boneless skinless chicken breasts (about 1.5 lbs), cubed
    • 1 pound brussels sprouts, halved 
    • 2 sweet potatoes, cubed 
    • ½ red onion, sliced
    • 4 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder 
    • 1 ½ teaspoon salt
    • ½ teaspoon black pepper

    How to Make Sheet Pan Chicken and Vegetables

    ?️ Step 1: Preheat the oven

    Preheat the oven to 400 degrees. Line a large baking sheet with foil for easy clean up. 

    ? Step 2: Mix all ingredients

    In a large bowl, toss all of the ingredients together. Spread in an even layer on the baking sheet. 

    ? Step 3: Bake 

    Bake for 20 - 25 minutes, flipping halfway. The chicken and vegetables should be cooked through. 

    Optional: sprinkle with salt to taste and freshly chopped parsley before serving.
