I wouldn't recommend making it more than a couple hours ahead of time! The textures won't be as fresh.
You could prep all of the ingredients the night before: slice the watermelon, mix the dressing (store it in the fridge), and portion out all of the ingredients. That way all you have to do day-of it toss it together 🙂
