Strawberry Chicken Salad

This strawberry chicken salad with balsamic dressing is deliciously fresh and tasty. It's topped with sweet strawberries, crunchy pecans, flakes of parmesan and drizzled with a creamy balsamic vinaigrette.


  • 2 boneless skinless chicken breasts
  • 6 cups chopped romaine
  • 1 ½ cups chopped strawberries
  • 1 avocado, diced
  • ½ cup shaved parmesan
  • ½ cup chopped pecans
  • ⅓ cup chopped red onion

Creamy Balsamic Dressing:

  • ¼ cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon dijon
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper


  1. Cut the chicken: slice the chicken breasts in half horizontally to make 4 chicken cutlets.
  2. Mix the dressing: in a small bowl, add all of the dressing ingredients and stir or whisk until emulsified and completely mixed.
  3. Cook the chicken: heat a large skillet over medium high heat. Place the chicken in the skillet and cook for 5-6 minutes on each side, until cooked through to 165°F. Let the chicken rest for 10 minutes and then slice into thin strips.
  4. Make the salad: add all of the salad ingredients, including the cooked chicken, to a large bowl.
    Add the dressing: drizzle as much of the dressing as desired over the top and toss to mix.
  5. Serve: serve immediately.
