Peach Salad with Honey Vinaigrette

Description

This peach salad is loaded with fresh sliced peaches, blueberries, pecans, avocado and more. It's drizzled in a simple honey vinaigrette, which will be your new favorite dressing! This recipe is a satisfying mix of sweet, crunchy, and fruity flavors.


Ingredients

  • 6 cups spring mix lettuce
  • 3 peaches, sliced
  • 1 cup blueberries
  • 1 avocado, sliced
  • ½ small red onion, thinly sliced
  • ½ cup crumbled feta
  • ½ cup chopped pecans

Honey Vinaigrette:

  • ½ cup olive oil
  • ⅓ cup honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • ½ teaspoon salt

Instructions

  1. Add all of the ingredients for the salad to a large bowl.
  2. In a small bowl or jar, whisk together the dressing ingredients until emulsified (fully mixed & thickened).
  3. Drizzle the dressing over the salad and toss. Use as much of the dressing as preferred.
