Oven Roasted Potatoes

These easy oven roasted potatoes are crispy on the outside and fluffy on the inside. They're a quick and simple side dish flavored with a classic combination of garlic and herbs.


  • 1 ½ - 2 pounds baby red potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper


  1. Preheat the oven to 425° Fahrenheit. Line a medium baking sheet with aluminum foil or parchment paper for easy clean up.
  2. Cut the baby potatoes in half; if there are very large potatoes cut them into quarters to ensure even cooking.
  3. Toss the potatoes with the olive oil, garlic, thyme, salt and pepper on the baking sheet. Arrange them in a single layer so that they are not overlapping.
  4. Bake the potatoes in the preheated oven for 25 - 35 minutes, until the potatoes are cooked through. Flip the potatoes after 15 minutes and check them at 25 minutes for doneness.
  5. Serve immediately, optionally topped with chopped fresh parsley.
