Description
This Italian Chopped Salad recipe is loaded with all of your favorite Italian-inspired ingredients like salami, mozzarella, parmesan and more! Plus all of the ingredients are chopped so that every bite gets maximum flavor.
Ingredients

- 4 cups shredded lettuce (iceberg or romaine)
- 5 ounces salami, sliced
- 1 pint cherry tomatoes, halved
- 1 (15 ounce) can chickpeas, drained and rinsed
- 1 cup shredded radicchio
- 1 cup fresh mozzarella pearls
- ⅓ cup red onion, sliced
- ⅓ cup sliced pepperoncini
- ⅓ cup shredded parmesan cheese, optional
Italian Vinaigrette:
- ⅓ cup olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons lemon juice
- 1 teaspoon italian seasoning
- ¼ teaspoon garlic powder
- ¼ teaspoon red pepper flakes, optional
- ¼ teaspoon salt
- Pinch of black pepper
Instructions
- In a small bowl, stir together the dressing ingredients.
- Add all of the salad ingredients to a large bowl. Pour as much of the dressing on top as preferred. Toss to coat. Enjoy!
Notes
- If you don't have Italian seasoning on hand you can substitute with oregano.
