Italian Chopped Salad

Description

This Italian Chopped Salad recipe is loaded with all of your favorite Italian-inspired ingredients like salami, mozzarella, parmesan and more! Plus all of the ingredients are chopped so that every bite gets maximum flavor.


Ingredients

Scale
  • 4 cups shredded lettuce (iceberg or romaine)
  • 5 ounces salami, sliced
  • 1 pint cherry tomatoes, halved
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 cup shredded radicchio
  • 1 cup fresh mozzarella pearls 
  • ⅓ cup red onion, sliced
  • ⅓ cup sliced pepperoncini
  • ⅓ cup shredded parmesan cheese, optional

 

Italian Vinaigrette:

  • ⅓ cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon italian seasoning
  • ¼ teaspoon garlic powder
  • ¼ teaspoon red pepper flakes, optional
  • ¼ teaspoon salt
  • Pinch of black pepper

Instructions

  1. In a small bowl, stir together the dressing ingredients. 
  2. Add all of the salad ingredients to a large bowl. Pour as much of the dressing on top as preferred. Toss to coat. Enjoy!

Notes

  • If you don't have Italian seasoning on hand you can substitute with oregano.
