Not only is this a healthy recipe that's loaded with fresh ingredients; it's tasty and satisfying too. The hard boiled eggs give this recipe plenty of protein, and all of the chopped veggies add a good variety of nutrients.

Ingredient Notes
- Dressing: I've created my own simple, homemade Zesty Italian Dressing for this recipe but you can use a store bought version (that's what she does in the original TikTok recipe)
- Cucumbers: I've used English/hot house cucumbers but any variety will work
- Bell peppers: use any color
- Pepperoncini: these are usually found in a jar in the condiment aisle of the grocery store. Banana peppers (or even pickles) could be substituted.
Storage
- Leftovers: if you have leftovers, store them in an airtight container in the fridge for up to 4 - 5 days.
- Meal prep: this is a great recipe for meal prep! Make it ahead of time and store it in a single container or individual containers. Double the recipe if you want larger portions.

Ingredients
- 4 hard boiled eggs, peeled and chopped
- 2 cucumbers, peeled & diced
- 2 green bell peppers, diced
- ½ red onion, finely diced
- ½ cup sliced pepperoncini peppers
- ¼ cup roasted sunflower kernels
- ½ teaspoon salt
- ¼ teaspoon black pepper
Zesty Italian Dressing*:
- ¾ cup extra virgin olive oil
- ¼ cup red wine vinegar
- 2 tablespoons maple syrup or honey
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon red pepper flakes
Instructions
- Add all of the dressing ingredients to a small bowl or jar and stir to mix.
- Add all of the salad ingredients to a large bowl. Drizzle the dressing over the salad and toss to coat. Start with half of the dressing and add more as desired.
- Enjoy! Store in an airtight container in the fridge for up to 4 - 5 days.
