How to Make Homemade Chicken Nuggets with Panko
Step 1: Mix the Panko & Seasonings
In a medium bowl, stir together the panko breadcrumbs, Italian seasoning, garlic powder, and salt & pepper to taste.
Step 2: Whisk The Eggs
In another medium bowl, whisk together the eggs.
Step 3: Prepare the Nuggets
Dip each nugget into the eggs and then into the panko breadcrumbs. The nuggets should be covered with egg and then breadcrumbs on all sides. Set aside the coated nuggets.
Step 4: Cook the Nuggets
Heat 2 tablespoons oil in a large skillet over medium heat. Add the nuggets to the skillet in a single layer (cook in batches if necessary, adding 1 - 2 tablespoon of oil each time you add nuggets to the pan). Cook the nuggets for 5 - 7 minutes, flipping to brown them on all sides. If your nuggets start to become dry, add more oil to the pan.

Tips for This Recipe
Coat the nuggets: as you dip your nuggets in the egg and breadcrumbs, make sure they are fully covered by each. I like to press and roll my nuggets into the breadcrumbs so that they are completely coated.
Set up an assembly line for the nuggets: for convenience, place your eggs, breadcrumbs, and empty plate in a line so that you can quickly move the nuggets through each. Shallow bowls also work best for this.
Add more oil while cooking: if you find that there's no oil left in your pan while cooking the nuggets, add a drizzle or two more. The hot oil is what makes the nuggets crispy & golden.
