    Healthy Cookie Dough Bites

    These healthy cookie dough bites are as close as it gets to the real thing while using more wholesome ingredients. This recipe is no bake, loaded with chocolate chips, and perfect if you're craving a sweet, bite-sized snack!

    About This Recipe

    These healthy cookie dough bites taste as close to raw cookie dough as possible while using more wholesome ingredients: natural sweeteners, almond flour, peanut butter & more.

    These bites are soft, chewy, and loaded with chocolate chips. You have to taste them to believe them! They'll fool your tastebuds into thinking that you're eating the real thing.

    Easy to make in about 10 minutes, you can make a batch of these bites and keep them handy in the fridge for days. These bites are ideal as a snack or as a treat for a party.

    Ingredients

    The full recipe is at the bottom of this page, but here's a quick overview of what you'll need & how to make it:

    • ½ cup tahini
    • 4 tablespoons pure maple syrup
    • 2 tablespoons coconut oil, melted
    • 1 tablespoon peanut butter 
    • 1 teaspoon vanilla extract 
    • ¼ teaspoon salt
    • 1 cup almond flour 
    • ⅓ cup chocolate chips

    Popular Additions & Substitutions

    Maple Syrup:

    Instead of maple syrup, feel free to substitute your favorite sweetener alternative like honey, agave, etc.

    Chocolate Chips:

    Swap out chocolate chips for your favorite candy to give these cookie dough bites a twist! You can use mini or dark chocolate chips or any other candy/chunks you prefer.

    Tahini:

    Instead of tahini you can use peanut butter (or any other nut butter). If you do this you will need to use less almond flour (add a little at a time until you reach the desired consistency).

    How to Make Cookie Dough Bites

    STEP 1: In a medium mixing bowl, stir together all of the ingredients except for the almond flour and chocolate chips. 

    STEP 2: Stir in ¾ cup of the almond flour. Let the mixing bowl chill in the freezer for 5 minutes to allow the dough to thicken. 

    STEP 3: Stir in the remaining almond flour if needed to reach a dough consistency. Your dough should be moist and able to be formed into balls.

    STEP 4: Use a cookie scoop or spoon to portion out about 1 tablespoon of dough. Use your hands to gently roll it into a ball. Place it on a plate lined with parchment paper. Repeat until all of the dough has been used up. 

    STEP 5: Freeze the bites for 15 minutes to allow them to firm up. Enjoy immediately or store in the fridge or freezer in an airtight container. 

    Tips for This Recipe

    How Much Flour to Add:

    Start by adding ½ cup - ¾ cup of almond flour and then freeze your dough for 5 minutes. As the dough sits it will thicken and the flour will absorb some of the moisture.

    Continue adding flour if needed until the dough reached a moldable consistency: it should be moist but not falling apart.

    If Your Bites are Too Soft:

    These cookie dough bites will quickly become soft at room temperature. This is part of what makes them delicious — just like real cookie dough!

    However, if you find that the dough is too soft when trying to make the bites or while trying to eat them, refrigerate or freeze the balls for a few minutes first.

    How to Store Cookie Dough Bites

    Store your cookie dough bites in an airtight container in the freezer or fridge. The bites will harden in the freezer, but once brought to room temperature they will thaw quickly. I like to keep mine in the fridge so that they are soft & chewy!
