This easy cucumber tomato salad showcases the best of summer produce! It's made with tomatoes, cucumbers, and red onion tossed in a tangy herb dressing. The flavors are simple, classic, and so refreshing.

- 2 cucumbers, sliced (about 3 cups)
- 3 cups halved cherry tomatoes (about 1 pint)
- ½ cup sliced red onion
- 3 teaspoons dried dill
- ¼ cup red wine vinegar
- ¼ cup olive oil
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Instructions
- Optional: before making your salad, use a peeler to peel strips of skin off of the cucumbers. This makes them easier to bite. Do this about 5 times, lengthwise, around each cucumber.
- Add all of the ingredients to a large bowl and stir to mix. Taste and season with more salt, pepper, or dill as desired.
- If time allows, store in the fridge, covered, for at least 30 minutes before serving to allow the flavors to marinate.
