Crispy Roasted Brussels Sprouts with Garlic

This is a simple, tasty way to make brussels sprouts that are sprinkled with fresh garlic, salt and pepper. The brussels sprouts and garlic come out perfectly crispy every time.


  • 1 ½ pounds brussels sprouts (trimmed and halved)
  • 5 cloves garlic (roughly chopped)
  • 3 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper


  1. Preheat the oven to 400 degrees. Optionally, line a medium baking sheet with foil for easy clean up. 
  2. Place the brussels sprouts and garlic on the baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat and arrange in a single layer. 
  3. Bake for 30 – 40 minutes, flipping halfway through to ensure even cooking. The brussels sprouts should be tender and the outer leaves should be crispy. Depending on the size of your sprouts and personal preference, cooking time may vary. Test for doneness starting around 30 minutes.
  4. Serve immediately, optionally with additional salt and pepper to taste.
