Description
This apple brie salad is full of perfect fall pairings: sweet apples match with creamy brie cheese and chewy cranberries compliment crunchy pecans. It's an autumn-inspired salad that will have you craving every fresh, flavorful bite!
Ingredients

- 5-6 cups mixed greens
- 1 honeycrisp apple, sliced
- ⅓ cup dried cranberries
- ⅓ cup chopped pecans
- 6 oz brie cheese, cubed
Honey mustard dressing:
- ½ cup olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons dijon
- 3 tablespoons honey
- Salt & pepper, to taste
Instructions
- Make the dressing: in a small bowl, stir or whisk together the dressing ingredients.
- Mix the salad: add all of the salad ingredients to a large bowl. Drizzle as much of the dressing as preferred on top and toss to mix.
- Serve: serve immediately.
Notes
- Note: there's no need to cut the rind off of the brie cheese for this recipe (it's completely edible). Simply unwrap it, slice it into cubes, and add it to the salad.
