Servings: 3 cups
- 3 ripe mangoes peeled and diced
- 1 jalapeno seeded and diced
- ½ red bell pepper diced
- ½ cup red onion diced
- ¼ cup chopped fresh cilantro loosely packed
- ⅛ teaspoons salt plus more to taste
- Zest of ½ of a lime
- Juice of 1 lime
Add all ingredients to a medium bowl and stir gently to mix. Taste and season with additional salt if preferred.
Serve with chips or as a topping. For best flavor, let the salsa sit for 10 - 15 minutes before serving (the flavors will marinate and strengthen as the salsa sits). Store leftovers in an airtight container in the fridge for up to 2 days.
