1 lb (16 oz) fresh baby spinach 2 tbsp unsalted butter 1 onion 4 cloves garlic 6 oz cream cheese ½ cup heavy cream ¼ cup parmesan ½ tsp salt ¼ tsp black pepper Pinch of: nutmeg & cayenne, optional
Add butter to a large pot & cook the onion 5-7 minutes.
Add garlic & cook for 1 minute.
Add everything except for the spinach. Bring to a boil & then reduce the heat to low.
Add the spinach in large handfuls, stirring after each one.
Stir until fully mixed.
Serve warm. Or refrigerate until ready to serve and reheat in microwave.
