Chicken Enchilada Soup
1 yellow onion 4 cloves garlic ¼ cup tomato paste 4 cups chicken broth 1 can diced tomatoes 2 tsp ground cumin 1 tbsp chili powder 1 teaspoon oregano 2 chicken breasts 2 cups corn 1 can black beans
Cook the onion & garlic in a large pot. Stir in tomato paste.
Add remaining ingredients except for chicken, corn & beans.
Simmer for 15 minutes.
Add chicken, corn & beans.
Add your favorite toppings!
