Watermelon Cucumber Salad

A light and refreshing cucumber watermelon salad with feta, mint, and a simple olive oil and lime dressing.


  • 6 - 7 cups cubed watermelon (about 1 mini watermelon)
  • 2 cups sliced cucumber (persian or english cucumber) 
  • ¾ cup feta crumbles (about 5 ounces)
  • ¼ cup fresh mint, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey
  • Pinch of salt


  1. In a small bowl, mix together the dressing ingredients: olive oil, lime juice, and honey.
  2. Add the watermelon, cucumber, half of the feta, and mint to a large serving bowl. Toss with the dressing. Top with the remaining feta.
  3. Enjoy! This salad is best served cold and within about 2 hours of making it.
