Description
A light and refreshing cucumber watermelon salad with feta, mint, and a simple olive oil and lime dressing.
Ingredients

- 6 - 7 cups cubed watermelon (about 1 mini watermelon)
- 2 cups sliced cucumber (persian or english cucumber)
- ¾ cup feta crumbles (about 5 ounces)
- ¼ cup fresh mint, chopped
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 2 tablespoons honey
- Pinch of salt
Instructions
- In a small bowl, mix together the dressing ingredients: olive oil, lime juice, and honey.
- Add the watermelon, cucumber, half of the feta, and mint to a large serving bowl. Toss with the dressing. Top with the remaining feta.
- Enjoy! This salad is best served cold and within about 2 hours of making it.
