Description
This easy fried rice is made with tofu and mixed vegetables. It's naturally vegan (no eggs) and ready in less than 30 minutes.
Ingredients

- 1 (14 ounce) package extra-firm tofu
- 5 tablespoons soy sauce (divided (or coconut aminos for gluten-free))
- 4 cloves garlic (minced)
- 3 tablespoons sesame oil (divided)
- 1 tablespoon minced fresh ginger
- 1 tablespoon rice vinegar
- 1 tablespoon Sriracha ((optional, for spice))
- 1 medium yellow onion (chopped)
- 2 cups frozen mixed vegetables ((I used peas & carrots))
- 4 cups cooked white rice
Instructions
- Drain and press the tofu. Cut it into 1” cubes.
- In a small bowl, stir together the ingredients for the sauce: garlic, ginger, 3 tablespoons soy sauce, rice vinegar and 1 tablespoon (or more) Sriracha (optional, for spice).
- Heat 1 tablespoon of oil in a large skillet or wok over medium high heat. Once hot, add the tofu and cook 2 - 3 minutes on each side, until lightly browned.
- Pour 2 tablespoons of soy sauce over the tofu. Stir and toss the tofu in the soy sauce for 1 - 2 minutes (it will be hot and bubbling). Remove the tofu from the pan and set aside.
- Add 1 tablespoon of oil to the pan. Add the onion and frozen vegetables and cook, stirring occasionally, for 3 - 4 minutes, until the onions are translucent.
- Add the garlic and ginger and cook for 1 minute more, until fragrant.
- Add the rice to the pan and then pour in the sauce mixture and cook 2 - 3 minutes more, until heated through. Taste and add additional soy sauce as preferred.
- Serve warm, optionally topped with chopped green onions.
Notes
*How to press tofu: drain and press your tofu for 20 - 30 minutes before starting this recipe. Use a tofu press or wrap your tofu in paper towels (or a kitchen towel) and then press it between two cutting boards with a weight (like a heavy book) on top. This will remove moisture and help the tofu cook crispy.
