Tortellini Pasta Salad

Description

This Tortellini Pasta Salad is pasta salad on another level! It's made with cheesy tortellini and the ultimate combination of Italian-inspired mix-ins tossed in a simple Italian dressing.


Ingredients

Scale
  • 20 ounces cheese tortellini
  • 8 ounces mozzarella pearls
  • 1 pint cherry tomatoes, halved
  • 1 green bell pepper, diced
  • 4 - 6 ounces salami, sliced
  • 1 cup diced cucumber
  • ½ cup diced red onion
  • ⅓ cup chopped parsley
  • ¼ cup shredded parmesan, optional

Italian dressing:

  • ¾ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons lemon juice
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Cook the tortellini according to the package’s instructions. Strain and rinse with cold water until cooled.
  2. In a small bowl or jar, mix together the dressing.
  3. Add all of the salad ingredients, including the tortellini, to a large bowl. Drizzle as much of the dressing as preferred over the top and toss to coat.
  4. Enjoy! Serve immediately or keep refrigerated for up to 3 - 4 days.
