Description
This Tortellini Pasta Salad is pasta salad on another level! It's made with cheesy tortellini and the ultimate combination of Italian-inspired mix-ins tossed in a simple Italian dressing.
Ingredients

- 20 ounces cheese tortellini
- 8 ounces mozzarella pearls
- 1 pint cherry tomatoes, halved
- 1 green bell pepper, diced
- 4 - 6 ounces salami, sliced
- 1 cup diced cucumber
- ½ cup diced red onion
- ⅓ cup chopped parsley
- ¼ cup shredded parmesan, optional
Italian dressing:
- ¾ cup extra-virgin olive oil
- ¼ cup red wine vinegar
- 2 tablespoons lemon juice
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Cook the tortellini according to the package’s instructions. Strain and rinse with cold water until cooled.
- In a small bowl or jar, mix together the dressing.
- Add all of the salad ingredients, including the tortellini, to a large bowl. Drizzle as much of the dressing as preferred over the top and toss to coat.
- Enjoy! Serve immediately or keep refrigerated for up to 3 - 4 days.
