Description
This sausage sheet pan and veggies meal is ready in only 30 minutes and cooks on 1 sheet pan in the oven. It's a simple and delicious recipe that's perfect for dinner or meal prep.

- 12 ounces chicken or turkey sausage links (cut into slices (I use chicken and apple sausage))
- 2 cups peeled & diced sweet potatoes
- 1 pound brussels sprouts (halved)
- 1 red bell pepper (chopped)
- ¼ cup olive oil
- 1 teaspoon salt
- 1 teaspoon dried thyme
- ½ teaspoon pepper
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
Instructions
- Preheat the oven to 400 degrees. If preferred, line a large sheet pan with foil for easy clean up.
- Add the sausage, sweet potatoes, brussels sprouts and bell pepper to the sheet pan. Drizzle with olive oil and sprinkle with seasonings. Toss to coat. Arrange the ingredients in one layer and push the sausage down so that it touches the pan (this will help it brown and cook).
- Bake in the preheated oven for 20 - 25 minutes, flipping halfway. The vegetables should be tender and the sausage should be cooked through.
