Pumpkin Oatmeal

Description

These pumpkin oats are a fall-inspired treat that tastes like pumpkin pie in a bowl! They have just the right amount of pumpkin, sweetness and creaminess. 


Ingredients

Scale
  • 1 cup old fashioned rolled oats
  • 2 cups almond milk ((or any milk))
  • ¼ cup pumpkin puree
  • 2 tablespoons pure maple syrup
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Optional for topping: chopped pecans & additional maple syrup

Instructions

Stovetop Instructions: 

  1. In a small saucepan over medium heat, bring the milk to a simmer. Stir in the oats and simmer gently for 10 minutes, uncovered, stirring occasionally. Watch closely so that the milk does not boil over. For creamier oatmeal, cook for longer. 
  2. Stir in the pumpkin puree, maple syrup, cinnamon and nutmeg. 
  3. Serve warm, optionally topped  with chopped pecans and a drizzle of maple syrup. 

Microwave Instructions: 

  1. Add the oats and milk to a microwave-safe bowl. Stir once or twice. Cover and microwave for 2 minutes. The oats should be cooked and thickened. 
  2. Stir in the pumpkin, maple syrup, cinnamon and nutmeg. 
  3. Serve warm, optionally topped  with chopped pecans and a drizzle of maple syrup.
