Ingredients
Scale
- 1 cup uncooked quinoa
- 2 cups water
- 2 cups halved cherry tomatoes
- 1 (15 ounce) can chickpeas, drained
- 2 cups sliced cucumber
- ½ cups diced red onion
- ⅓ cup chopped flat-leaf parsley
- ½ cup cubed feta
- ½ cup black olives
For the dressing:
- ⅓ cup olive oil
- 3 tablespoons lemon juice
- 3 tablespoons red wine vinegar
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Cook the quinoa: rinse the quinoa in a fine mesh strainer. Add it to 2 cups of water in a medium saucepan over high heat. Bring to a boil, cover, and turn the heat to low. Let the quinoa simmer for 15 minutes, until cooked. Once cooked, fluff with a fork and set aside to cool.
- Make the dressing: in a small bowl, mix together the ingredients for the dressing.
- Mix the salad: Add the quinoa to a large bowl with the remaining salad ingredients. Drizzle the dressing on top and toss to mix. Taste and season with additional salt, pepper, or lemon juice as desired.
- Serve: for best flavor, chill your salad for 10 minutes or more (covered, in the fridge) before serving.
