Description

This Mediterranean Chopped Salad is topped with classic Mediterranean-inspired ingredients, all finely chopped to make every bite crunchy, creamy, and flavor-loaded! The salad uses only 6 ingredients and it's quick to throw together when you're craving something fresh.


Ingredients

  • 5 cups chopped romaine lettuce
  • 1 cup chopped kalamata olives (or black olives)
  • 1 cup chickpeas, drained & rinsed
  • 1 cup halved cherry tomatoes
  • 1 cup diced cucumber
  • ½ cup cubed feta
  • ½ cup diced red onion

Greek Dressing:

  • ¼ cup olive oil
  • 1 clove garlic, minced
  • 1 tablespoon red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon oregano
  • ¼ teaspoon dijon mustard
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Make the dressing: in a small bowl or jar, stir or whisk together the dressing ingredients until fully mixed and emulsified (thickened).
  2. Mix the salad: add the lettuce to a large bowl and top with the remaining ingredients. Drizzle as much of the dressing as preferred on top and toss to mix.
  3. Serve: serve immediately. Optionally sprinkle additional oregano on top before serving.
