Description
This Mediterranean Chopped Salad is topped with classic Mediterranean-inspired ingredients, all finely chopped to make every bite crunchy, creamy, and flavor-loaded! The salad uses only 6 ingredients and it's quick to throw together when you're craving something fresh.
Ingredients

- 5 cups chopped romaine lettuce
- 1 cup chopped kalamata olives (or black olives)
- 1 cup chickpeas, drained & rinsed
- 1 cup halved cherry tomatoes
- 1 cup diced cucumber
- ½ cup cubed feta
- ½ cup diced red onion
Greek Dressing:
- ¼ cup olive oil
- 1 clove garlic, minced
- 1 tablespoon red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon oregano
- ¼ teaspoon dijon mustard
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Make the dressing: in a small bowl or jar, stir or whisk together the dressing ingredients until fully mixed and emulsified (thickened).
- Mix the salad: add the lettuce to a large bowl and top with the remaining ingredients. Drizzle as much of the dressing as preferred on top and toss to mix.
- Serve: serve immediately. Optionally sprinkle additional oregano on top before serving.
