A classic, easy recipe for honey glazed carrots that are sweet and buttery! This is a traditional way to make glazed carrots that's perfect as a side dish for a simple dinner or a special occasion.

- 2 pounds baby carrots
- ¼ cup honey
- ¼ cup unsalted butter
- 1 ½ teaspoons salt (divided)
- ¼ teaspoon black pepper
Instructions
- Add the carrots to a large skillet. Pour in water until the carrots are barely covered. Stir in ½ teaspoon salt.
- Bring the skillet to a boil, cover, reduce heat and simmer over medium-low heat for 10 - 15 minutes, or until the carrots start to become tender when pierced with a fork. Drain the carrots in a colander and set aside.
- In the same skillet over medium low heat, add the honey, butter, salt and pepper. Stir and cook for 4 - 5 minutes, until the butter is melted and the glaze begins to thicken.
- Add the carrots and stir until coated in the glaze. Continue cooking until the glaze reaches your desired thickness. Turn up the heat slightly if needed.
- Serve warm, optionally topped with chopped fresh parsley.
