Description
This easy garden salad recipe is made with a delicious, seasonal mix of fresh vegetables and a simple, 4-ingredient white wine vinaigrette.

- 6 cups chopped lettuce (use romaine lettuce or a mix of romaine and red leaf lettuce)
- 4 radishes, sliced
- 1 yellow bell pepper, diced
- 1 cup halved grape tomatoes
- 1 cup sliced mini cucumbers
- 1 cup sliced carrots
- ⅓ cup thinly sliced red onion
- 2 tablespoons chopped flat-leaf parsley, optional for garnish
- 1 cup croutons, optional
For the White Wine Vinaigrette:
- ⅓ cup olive oil
- 1 tablespoon white wine vinegar*
- 1 tablespoon fresh-squeezed lemon juice
- 1 teaspoon dijon mustard
- ½ teaspoon salt
- ¼ teaspoon freshly-ground black pepper
- 2 teaspoons honey, optional
Instructions
- In a small jar or bowl, whisk together the dressing ingredients until emulsified (fully combined and slightly thickened).
- Add all of the salad ingredients to a large bowl, toss with the dressing and enjoy! Optionally, top with chopped parsley, croutons, and freshly ground black pepper.
Notes
*You can substitute apple cider vinegar or red wine vinegar if preferred. Each option will change the flavor of the dressing.
