This easy egg salad sandwich recipe is a classic crowd-favorite. It's SO simple to make and the combination of creamy egg salad on bread is perfection.

- 8 hard boiled eggs
- 2 green onions, chopped
- ⅓ cup mayonnaise
- 1 tablespoon dijon
- 1 tablespoon fresh dill, chopped
- 2 teaspoons chopped chives
- 2 teaspoons fresh lemon juice (from 1 lemon)
- ½ teaspoon salt
- ¼ teaspoon pepper
- Lettuce, optional for sandwich
- Bread
Instructions
- Chop & mash the eggs: roughly chop the eggs. Add them to a large bowl and mash them a few times with a fork.
- Mix: add the remaining ingredients to the bowl with the eggs and stir until mixed.
- Make the sandwich: assemble the sandwich, optionally adding a layer of lettuce.
Notes
- Eggs: you can buy pre-cooked hardboiled eggs or hard-boil your own. To hardboil your eggs: add the eggs to a saucepan and fill it with cold water. Bring to a boil. Once the pan reaches a boil, turn off the heat but leave the pan on the burner. Cover it and let it sit for 10-12 minutes. Take the eggs out of the pan and rinse them under cold water.
