Description

This easy egg salad sandwich recipe is a classic crowd-favorite. It's SO simple to make and the combination of creamy egg salad on bread is perfection.


Ingredients

  • 8 hard boiled eggs
  • 2 green onions, chopped
  • ⅓ cup mayonnaise
  • 1 tablespoon dijon
  • 1 tablespoon fresh dill, chopped
  • 2 teaspoons chopped chives
  • 2 teaspoons fresh lemon juice (from 1 lemon)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Lettuce, optional for sandwich
  • Bread

Instructions

  1. Chop & mash the eggs: roughly chop the eggs. Add them to a large bowl and mash them a few times with a fork.
  2. Mix: add the remaining ingredients to the bowl with the eggs and stir until mixed.
  3. Make the sandwich: assemble the sandwich, optionally adding a layer of lettuce.

Notes

  • Eggs: you can buy pre-cooked hardboiled eggs or hard-boil your own. To hardboil your eggs: add the eggs to a saucepan and fill it with cold water. Bring to a boil. Once the pan reaches a boil, turn off the heat but leave the pan on the burner. Cover it and let it sit for 10-12 minutes. Take the eggs out of the pan and rinse them under cold water.
