If you love pickles, this will be your new favorite recipe! It's a Dill Pickle Pasta Salad that's creamy, crunchy, and packed with pickle flavor.

- 1 pound rotini pasta
- 2 ½ cups diced dill pickles (about 5-6 pickles)
- 1 ½ cups cubed sharp cheddar cheese
- ⅓ cup diced red onion
- 2 tablespoons chopped chives
- 2 tablespoons fresh dill
Dressing:
- ¾ cup mayonnaise
- ½ cup sour cream
- 3 tablespoons pickle juice
- 1 teaspoon dijon mustard
- ⅛ teaspoon ground cayenne pepper
- Salt & pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions. Once cooked, drain and rinse under cold water.
- In a small bowl, stir together the dressing ingredients.
Add the salad ingredients, including the cooked pasta, to a large bowl. Drizzle the dressing on top and toss until mixed. - For best flavor, cover and refrigerate for an hour before serving. Toss once more before serving.
