Dill Pickle Pasta Salad

Description

If you love pickles, this will be your new favorite recipe! It's a Dill Pickle Pasta Salad that's creamy, crunchy, and packed with pickle flavor.


Ingredients

Scale
  • 1 pound rotini pasta
  • 2 ½ cups diced dill pickles (about 5-6 pickles)
  • 1 ½ cups cubed sharp cheddar cheese
  • ⅓ cup diced red onion
  • 2 tablespoons chopped chives
  • 2 tablespoons fresh dill

Dressing:

  • ¾ cup mayonnaise
  • ½ cup sour cream
  • 3 tablespoons pickle juice
  • 1 teaspoon dijon mustard
  • ⅛ teaspoon ground cayenne pepper
  • Salt & pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions. Once cooked, drain and rinse under cold water.
  2. In a small bowl, stir together the dressing ingredients.
    Add the salad ingredients, including the cooked pasta, to a large bowl. Drizzle the dressing on top and toss until mixed.
  3. For best flavor, cover and refrigerate for an hour before serving. Toss once more before serving.
