Crispy Smashed Brussels Sprouts with Parmesan

Description

These crispy smashed brussels sprouts with parmesan are not your average brussels sprouts! Each sprout is transformed into a crispy, cheesy, bite of goodness.


Ingredients

  • 2 pounds brussels sprouts, trimmed
  • 3 teaspoons salt, divided
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • ¼ teaspoon black pepper
  • Pinch of red pepper flakes, or more to taste
  • ¼ cup shredded parmesan

Instructions

  1. Preheat the oven to 425°F.
    Salt a large pot of water with 2 teaspoons of salt and bring to a boil. The pot should have enough water to cover the brussels sprouts.
  2. Once boiling, add the brussels sprouts to the pot. Boil for 8-10 minutes, depending on the size of your sprouts. They should be tender when pierced with a fork but not cooked completely. Drain and let cool slightly.
  3. Add the brussels sprouts to a baking sheet. Gently pat dry with paper towels or a kitchen towel.
  4. Drizzle the olive oil over the brussels sprouts and then sprinkle the garlic powder, 1 teaspoon of salt, black pepper, and red pepper flakes over them. Toss to coat.
  5. Lay the brussels sprouts in a single layer on a baking sheet. Using the bottom of a glass cup, smash each sprout until it’s about ½ inch thick.
  6. Sprinkle parmesan cheese on each brussels sprout.
  7. Bake in the preheated oven for 20-30 minutes, until the parmesan is lightly browned and the brussels sprouts are cooked to your liking.
  8. Serve immediately while warm.
