Description
This Asian-inspired cabbage salad is made with a rainbow-colored ingredients and creamy peanut dressing. It's easy to make in only 15 minutes when you're craving something fresh and bright.

- 3 cups shredded red cabbage
- 3 cups shredded green cabbage
- 5 chopped green onions
- 1 thinly sliced red pepper
- 1 cup shredded carrots
- ⅓ cup chopped cilantro
- ⅓ cup salted peanuts for topping
- Sesame seeds, optional topping
For The Creamy Peanut Dressing:
- ¼ cup smooth peanut butter
- ¼ cup low-sodium soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon pure maple syrup (or honey)
- 1 teaspoon rice vinegar
- ½ teaspoon ginger powder
For The Toppings:
- ⅓ cup peanuts (or more) for topping
- Sesame seeds, optional topping
Instructions
- In a small bowl or jar, stir together the dressing ingredients. Add about 2-3 tablespoons of water, or more, until your dressing reaches your desired thickness.
- Add all of the salad ingredients to a large bowl: red cabbage, green cabbage, carrots, red pepper, green onions, cilantro.
- Drizzle the dressing over the salad and toss to coat.
- Sprinkle the peanuts and sesame seeds (optional) on top of the salad before serving.
