Cabbage Salad with Peanut Dressing

Description

This Asian-inspired cabbage salad is made with a rainbow-colored ingredients and creamy peanut dressing. It's easy to make in only 15 minutes when you're craving something fresh and bright.


Ingredients

  • 3 cups shredded red cabbage
  • 3 cups shredded green cabbage
  • 5 chopped green onions
  • 1 thinly sliced red pepper
  • 1 cup shredded carrots
  • ⅓ cup chopped cilantro
  • ⅓ cup salted peanuts for topping
  • Sesame seeds, optional topping

For The Creamy Peanut Dressing: 

  • ¼ cup smooth peanut butter
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon pure maple syrup (or honey)
  • 1 teaspoon rice vinegar
  • ½ teaspoon ginger powder

For The Toppings:

  • ⅓ cup peanuts (or more) for topping
  • Sesame seeds, optional topping

Instructions

  1. In a small bowl or jar, stir together the dressing ingredients. Add about 2-3 tablespoons of water, or more, until your dressing reaches your desired thickness.
  2. Add all of the salad ingredients to a large bowl: red cabbage, green cabbage, carrots, red pepper, green onions, cilantro.
  3. Drizzle the dressing over the salad and toss to coat.
  4. Sprinkle the peanuts and sesame seeds (optional) on top of the salad before serving.
