Description
This is the BEST side salad: it goes with everything, is easy to make, and is always a crowd-pleaser! It uses a tasty, classic mix of ingredients that everyone will love and that's quick to throw together.
Ingredients

- 4 - 5 cups chopped romaine lettuce
- 1 avocado, diced
- 1 cup sliced cucumber
- 1 cup grape tomatoes, halved
- 1 cup croutons
- ½ cup grated carrots
- ¼ cup thinly sliced red onion
- ¼ cup freshly shredded parmesan, optional for topping
Creamy Italian Dressing:
- ½ cup mayonnaise
- ¼ cup olive oil
- 3 tablespoons white wine vinegar
- 1 teaspoon Italian seasoning (or oregano)
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- Pinch of black pepper
- ¼ cup finely fresh grated parmesan, optional
- 1 - 2 tablespoons water, if needed to thin the dressing
Instructions
- Make the dressing: in a small bowl, stir together the dressing ingredients. Add 1-2 tablespoons of water, as needed until the dressing reaches your preferred consistency.
- Assemble the salad: add all of the salad ingredients to a large bowl.
- Toss & serve: drizzle as much of the dressing as desired over the salad and toss to mix. Optionally, garnish with shredded parmesan before serving.
