Servings: 3 cups

Ingredients

  • 3 ripe mangoes peeled and diced
  • 1 jalapeno seeded and diced
  • ½ red bell pepper diced
  • ½ cup red onion diced
  • ¼ cup chopped fresh cilantro loosely packed
  • teaspoons salt plus more to taste
  • Zest of ½ of a lime
  • Juice of 1 lime

Instructions

  • Add all ingredients to a medium bowl and stir gently to mix. Taste and season with additional salt if preferred.
  • Serve with chips or as a topping. For best flavor, let the salsa sit for 10 - 15 minutes before serving (the flavors will marinate and strengthen as the salsa sits). Store leftovers in an airtight container in the fridge for up to 2 days.

Notes

Note: this is a helpful video on how to cut a mango for salsa: How to Dice a Mango. Basically: peel, slice off round discs (avoid the pit of the mango) and dice.
