2 medium sweet potatoes ⅓ cup salted butter ⅓ cup pure maple syrup ½ cup milk 2 eggs 1 tbsp all purpose flour 1 tsp vanilla extract ½ tsp ground nutmeg ½ tsp ground cinnamon ½ tsp salt 1 (9 inch) unbaked pie crust
Bake the potatoes at 425°F for 40-50 minutes, until cooked.
Peel the sweet potatoes. Add them to a bowl & stir with butter.
Add all ingredients to a blender.
Blend until smooth.
Pour the filling into the pie crust.
Bake at 350°F for 55 - 60 minutes, until a knife poked into the center comes out clean.
Let the pie cool before slicing.
