Mexican Corn Salad

Ingredients:

3 cans fire-roasted corn 5 green onions ½ cup crumbled cotija ½ cup diced red onion ⅓ cup chopped cilantro 1 jalapeno 3 tbsp mayonnaise 1 clove garlic Juice of 1 lime  ½ teaspoon chili powder Salt & pepper

Add the salad ingredients to a bowl.

Stir together the dressing ingredients.

Toss the dressing with the salad.

Optionally, top with more cotija.
