Jennifer Aniston Salad

Ingredients:

1 cup bulgur or quinoa 1 cup cucumber 1 can chickpeas ½ cup feta  ½ cup pistachios ⅓ cup parsley ⅓ cup mint ⅓ cup red onion Dressing: ¼ cup olive oil 2 lemons, juiced Salt & pepper

Add all of the ingredients to a bowl & toss to mix!
