Honey Mustard Chicken  Salad

Ingredients:

2 chicken breasts 1 tbsp olive oil 6 - 8 cups lettuce 2 slices bacon 1 avocado 1 pint cherry tomatoes 1 cup corn ½ cup red onion Dressing & Marinade: ⅔ cup whole grain dijon ⅔ cup olive oil 6 tbsp honey

In a small bowl or jar, make the dressing/marinade mix.

Marinate the chicken for at least 30 minutes in half of the mixture. Cook it on the stovetop for about 5 minutes, covered, on either side.

Add all of the salad ingredients to a large bowl.

Drizzle the dressing on top.

Toss to mix.

Serve immediately (makes about 4 - 5 servings).
