Fall Harvest Salad

Ingredients:

For the sweet potato: 1 sweet potato 2 tbsp olive oil Salt & pepper For the salad: 5 cups kale 1 red apple ½ cup dried cranberries ½ cup chopped pecans ⅓ cup pumpkin seeds ⅓ cup parmesan For the dressing: ⅓ cup tahini ¼ cup lemon juice 2 tbsp maple syrup 2 tsp dijon mustard

Bake the sweet potato at 425°F for 25 minutes.

Add all of the salad ingredients to a bowl.

Drizzle the dressing on top and toss to mix.
