Easy Roast Beef

Ingredients:

3 ½ - 4 pound boneless roast  (top or bottom roast or tenderloin) ½ cup olive oil 2 tsp kosher salt 1 tsp black pepper

Let the roast sit at room temperature for 1 to 1 ½ hours

Mix together the oil, salt & pepper.

Rub the oil mixture on the roast.

Optionally, tie the roast with twine.

Bake the roast at 450°F for 15 minutes.

Reduce the heat to 325°F & bake 25 - 30 minutes per pound.

Let the roast rest for 15-30 minutes before slicing.
