8 chicken thighs ¾ cup soy sauce ½ cup white vinegar ¼ cup honey 1 tsp black pepper 6 cloves garlic 1 tbsp olive oil 4 bay leaves
Mix together the sauce ingredients.
Sear the chicken for 2 minutes on each side. Remove it from the pan.
Pour the sauce into the pan. Add bay leaves and bring to a boil.
Reduce the heat to low & simmer the sauce and chicken for 20 - 25 minutes.
Remove the chicken & simmer the sauce for 5 minutes.
Add the chicken back to the sauce.
Serve over rice, optionally with lime wedges.
