- 1 pound brussels sprouts, sliced in half
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 6 slices thick bacon, chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper

Bacon: thick-cut bacon (as thick as you can find it!) is best but you can also use regular bacon
Syrup: pure maple syrup is recommended for this recipe but you can substitute any syrup variety
Brussels sprouts: if possible, find small or medium-sized brussels sprouts to cut down on cooking time
How to Make Maple Bacon Brussels Sprouts
Step 1: Preheat the Oven
Preheat the oven to 400 degrees. Optionally, line a medium baking sheet with foil for easy clean up.
Step 2: Add to baking sheet
Place the brussels sprouts and bacon on the baking sheet. Drizzle with olive oil and maple syrup. Sprinkle with salt and pepper. Toss to coat and arrange in a single layer.
Step 3: Bake
Bake for 30 - 40 minutes, flipping halfway through to ensure even baking. Drain any excess liquid for crispier brussels sprouts. The brussels sprouts should be tender and the outer leaves caramelized from the syrup. Depending on the size of your sprouts and personal preference, cooking time may vary. Test for doneness starting around 30 minutes.

Serve immediately, optionally topped with a drizzle of maple syrup.

Sslice them in half and trim the stems if preferred. If you have very large sprouts, slice them into quarters to help them cook evenly.
The cooking time for this recipe varies greatly depending on the size of your brussels sprouts and personal preference. Your brussels sprouts should be tender all the way through (poke one with a fork to test) and you can continue cooking until crispy if desired. I find that ours can take up to 40 - 45 minutes.
Thick cut bacon works best, but you can use any type of bacon. Any flavor of bacon (hardwood smoked, hickory, etc.) will work as well. Our favorite flavor of bacon for this recipe is Applewood smoked.
Top Tip
Drain any liquid: flip your brussels sprouts half way through their cooking time. If there's any excess liquid in your pan, drain it for crispier brussels sprouts.
